Banana Chocolate Chip Bread Recipe

Cut into 10 even servings.  (Approximately 1.2 gm egg protein/serving)  

Ingredients:  

1 cup sugar  

½ cup shortening  

2 large eggs  

2 teaspoons vanilla extract  

2 bananas, mashed  

2 cups all-purpose flour  

1 teaspoon baking soda  

½ teaspoon salt  

1 cup semisweet chocolate chips (use milk free version if allergic to milk)  

Directions: 

1.  Preheat oven to 350 degrees F.  

2.  In a mixing bowl, cream sugar and shortening.   

3.  Beat in eggs, vanilla, and bananas until thoroughly blended.    

4.  In another bowl, combine flour, baking soda, and salt; add to creamed mixture and stir just until combined.  

5.  Fold in chocolate chips.    

6.  Spoon into a greased 9x5x3 inch loaf pan.   

7.  Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.   

8.  Cool in pan for 10 minutes before removing to a wire rack to cool completely.
