Banana Oatmeal Bread Recipe

(Approximately 1.2 gm egg protein/serving) 

Ingredients:  

1/2 cup shortening   

1 cup white sugar  

1/2 teaspoon vanilla extract  

2 large eggs, beaten 

1 cups all-purpose flour  

1 cup quick cooking oats 

1 teaspoon baking soda 

1/2 teaspoon salt  

1/4 cup milk (substitute soy or rice milk if allergic to milk)  

1/2 teaspoon ground cinnamon 

1 1/2 cups mashed bananas 

1/2 cup chopped raisins (optional) 

Directions: 

1.  Preheat oven to 350 degrees F (175 degrees C).  

2.  Grease a 9x5-inch loaf pan and set aside.  

3.  Cream together the shortening and sugar.  

4.  Add eggs and vanilla; beat until fluffy.  

5.  Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk.  

6.  Mix until blended.  

7.  Fold in raisins (if using) and pour into prepared pan.  

8.  Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.  

9.  Cut into 10 even servings.  (Approximately 1.2 gm egg protein/serving)  

*Always make sure that product is cooked all the way through.
